New fine dining restaurant Reserve opened earlier this month in Cary, with two chefs collaborating on a menu that combines India’s culinary traditions with modern techniques and presentation.
Large sculptures of mudra hand gestures line one of the walls in the transformed space of the restaurant, a nod to the restaurant’s philosophy.
Jasjeet Singh, who co-owns Reserve (as well as the Durham casual Indian restaurant Urban Turban with Manish Kumar) and Priya Rani, who handles public relations for the restaurant, shared more of the vision for Reserve in an interview with The Line in May.
The goal was to “create a place that feels warm and welcoming,” Singh said—an experience, not just a restaurant.
The two chefs at the helm represent different culinary experiences.

Master Chef Vikas Kuriyal, Culinary Director, has studied Ayurvedic culinary principles. His experience across the globe includes Modi Retreat in Rishikesh, India, a luxury wellness resort.Â
While Vikas focuses on ancient cooking techniques and authentic recipes, Singh said, Chef Nitin Suvarna is more of a modern chef. Executive Chef Survana’s experience includes luxury hospitality, cruise lines, and private dining.
Reserve’s dinner menu demonstrates the restaurant’s philosophy. Each section is inspired by a mudra, or as the menu reads, “a sacred hand gesture rooted in Indian tradition and practiced for centuries as an expression of meaning, balance, and intention.”
The opening courses are intentionally light, while another section centers fire as a cooking technique, “where tandoor, grill, char, and coastal heat meet.”
As the menu outlines: “Prana awakens the senses. Anjali welcomes. Agni transforms. Prithvi nourishes. Veera inspires confidence. Varuna flows with abundance. Pushan comforts. And Ananda brings the evening to a memorable close.”
The drinks menu includes a cocktail tasting, non-alcoholic wellness elixirs, wine by the glass or by the bottle, and a full bar.
Find it: Reserve is located at 137 Weston Parkway, Cary. Reservations for dinner are available online.
